Summer Picnic

Hello, Summer! It’s great to see you again! ūüôā Is anyone else happy that summer is here? I love the slower pace, the pretty flowers, the laughter of the kids playing, the vacation plans, etc! I also really love a summer picnic! Thankfully, a few girlfriends and I had the opportunity to go on a fun summer picnic a few days ago.¬†I was a little worried it may be too hot, but we found the perfect spot near Grapevine Lake under some large¬†Texas trees! There was a breeze that was so delightful! Now, would I encourage you to picnic in August here in Texas? Probably not! Ha! But, definitely pack your baskets and head out soon for a fun afternoon.

For this picnic, I packed my favorite  pasta salad (recipe at bottom of post,) fresh veggie sourdough sandwiches, sweet strawberries, multi-grain chips, and fruit infused water. I wrapped each sandwich with parchment paper, twine, and a cute name tag (of course!)

One  way to make a drink more fun and extra cold is by using the king-sized silicone ice trays. My Aunt Betty sent me these as a gift. You can find them here on Amazon. Cut up fresh berries and blueberries and add to each ice cube tray and freeze overnight. Then right before serving, add a few slices of fresh lime, 2 king size ice fruit cubes, and some sparking water! For this fun drink, I finished it off by poking a fresh strawberry onto each chevron paper straw. Enjoy!

We set our picnic on this darling bandana quilt! I’ve had this quilt since I was 19 years old.¬†One summer, I came home from college with this idea in my head and my dear grandparents helped me make it! We sewed nine bandanas together, added batting to the middle layer and backed it with a simple navy fabric.

Veggie Pasta Salad

  • Entire box of spiral noodles (I like to use the quinoa/rice noodles for this recipe)
  • 1 pint of cherry tomatoes
  • 1 red pepper cut up
  • 1 yellow pepper cut up
  • 1 zucchini diced
  • 1/2 cup green, yellow, or purple onion cut up
  • 1/2 cup black olives
  • 1 cup mozzarella cut into cubes (I used almond cheese for this)
  • 6 fresh leaves of basil cut into strips
  • 1/2 cup Italian Dressing
  • Salt and pepper to taste

Prepare the pasta and set aside to cool. In a bowl, add in all of the above veggies, pasta, and dressing and toss until mixed. Place in fridge until chilled. Enjoy! :)
