Summer Superfood Salad

It’s just about that time…..Summertime! I’m not sure about you, but when it’s super hot outside (almost 100 degrees) I love a light, cold, crispy salad for lunch! I was inspired to make this salad after having something a bit similar years ago at a Whole Foods. Each of the ingredients in this Summer Superfood Salad are nutritional superstars!

Summer Superfood Salad Recipe

Kale is widely known for its cancer-fighting, cholesterol-lowering, antioxidant-rich goodness. It also is known as one of the most alkaline foods.
Purple Cabbage can help to detox the body and also help your brain function at its best.
Blueberries are loaded with antioxidants and can even help improve memory.
Carrots help with vision as well as slowing down the aging process of cells.
Tomatoes have benefits that cover almost every major part of the body including the heart, the skin, bones and even vision.
Onions contain chromium, which assists in regulating blood sugar. The phytochemicals in onions along with their vitamin C help improve immunity.
Cashews can help with heart, bone, hair and skin health.
Sunflower Seeds promote cardiovascular health, promote healthy cholesterol levels, and  support a healthy mood.
Acai Berries have been touted as a weight-loss and anti-aging aid. The fruit contains very high levels of antioxidants in the form of anthocyanins, which help fight cancer and heart disease.

Summer Superfood Salad

Summer Superfood Salad

  • 6 stalks of Kale torn into bite sized pieces
  • 1/2 head of cabbage cut into fine strips
  • 1/2 pint of blueberries
  • 2 Carrots grated
  • 1/2 pint of grape or cherry tomatoes
  • 1/2 of a purple onion cut into small strips
  • 5 Ounces of Cashews
  • 4 Tablespoons of Sunflower Seeds

Add all ingredients into a large bowl and set aside while making dressing. *Tip: If you are just making this salad for yourself and storing the rest to have the next day, I would wait to add the nuts til right before you are ready to eat it.


Acai Berry Salad Dressing

  • 1/4 Cup Olive Oil
  • 4 Tablespoons Acai Berry Juice or Pomegranate Juice
  • 2 Tablespoons Apple Cider Vinegar
  • 2 Tablespoons Honey
  • 1 Tablespoon Dijon Mustard
  • 1/4 Cup of Water
  • 1/2 Teaspoon of Sea Salt
  • 1/2 Teaspoon of Black Pepper

Add all ingredients to a high-speed blender and blend until the dressing is completely smooth. Store in a sealed container in the fridge for about a week and shake well before serving.

I personally like to keep this big bowl of salad in my fridge to eat on for a few days. What are some of your favorite healthy foods to eat when it is super hot outside?
